Savory notes arise from the bouquet with perfumed raspberry and black cherry. Light crimson in colour, this Pinot Noir delivers earthy, beetroot notes on the attack, followed baking spice with fine tannins rounding out a medium long finish.
Almost opaque in colour, the deep dark fruit flavours jump out from the glass, wafting plum, vanilla spice, and brambleberry. Full bodied with rich tannins, and pleasant acidity round out the mid palate, leaving a long, lingering finish.
All Canadian Wine Awards: Gold
Always our last grapes to come in for the year, separate blocks were picked over a span of two days starting on October 23rd to October 24th. Upon arrival they were de-stemmed and lightly crushed into different tanks in order to keep each vineyard block isolated. A 5-day cold soaking before selective yeasts were added, sparking off an intensive, hot fermentation with temperatures of up to 32 Celsius. Daily pump overs assisted in a quick and complete fermentation. Pressed directly to barrel, these wines spent 14 months in oak, before being blended together, minimal filtration followed prior to bottling
