Very pale yellow, white gold colour. Light floral blossoms, honesuckle on the nose, followed by light melon and gummy candies. A medium bodied wine, with stonefruit, peach pit, and refreshing acidity, followed by apricot and bitter tropical fruit on the palate. Dry, medium finish with slightly lime/lemon citrus at the very end.
De-stemmed and lightly crushed into the press, this sweet tasting juice was then transferred to tank and left to rest for 24 hours. After racking the clarified juice to another tank, the start of fermentation began. A 3 week period until it reached dryness folowed by 2 months resting on light lees, allows this wine to release its full potential. Blended with 15% Müller Thurgau for added complexity.
