Dark Chocolate Pate, by Chef Paul Cecconi, Brodo Kitchen

- 3 egg yolks
- 15 g sugar
- 250 g dark chocolate
- 150 g unsalted butter
- 250 ml whipping cream (not whipped)
-Line the bottom of desired pan with plastic wrap. Let wrap hang over the sides.
-Mix sugar and egg yolks until combined.
-Melt Chocolate and butter over a double boiler. If you don't have a double boiler place heat safe bowl over a pot of boiling water.
-Add melted chocolate and butter to sugar mixture and mix.
-Fold in cream and chill to room tempature.
-Add mixture to pan and chill in fridge until set.
-When ready to serve, cut into desired shapes and serve with fresh berries, or fruit.
-Pair with Stoneboats Verglas Ice Wine.
