Full-bodied, nearly opaque, and inky in colour. Deep, dark fruit flavours jump from the glass, wafting plum, vanilla spice, and blackberry. Rich tannins and pleasant acidity round out the mid-palate, leaving a lingering finish.
Almost always our last grapes to come in for the year, separate vineyards blocks were hand-picked over a span of two days. They were de-stemmed and lightly crushed into different tanks in order to keep each vineyard block isolated until the final blending. A 4-day cold soaking before selective yeasts were added, sparking off a fierce fermentation, with temperatures of up to 34 Celsius. Daily pump overs assisted in a rapid and complete fermentation, followed by a 5 day extended maceration. Pressed directly to a mixture of French and American barrels, these wines spent 15 months in oak, before being blended together prior to bottling.
